Drying fresh pasta, is it necessary before boiling? Also, there are eggs in the dough! Is it safe to dry?
I just bought my first pasta machine and made noodles. The thing that worries me is that there are raw eggs used in the dough. It seems unsafe? What do you think?
Oh! I know this sounds stupid, but if I want to make fresh pasta, can’t I just boil it right away, so that it is actually fresh? All the recipes I find say to dry the pasta for at least an hour. But why?
The short drying time will keep it from sticking in the pan. It is safe. People have been doing it for 1000 years.
If you are that concerned about it, just make an egg free pasta.
